Clients

So I still can't stand going to the clients. But I love when I leave. Today, on my way home, this guy smelled like piss. Unfortunately he was right behind me while I was leaving the bart station and I couldn't get away. I tried holding my breath. Having a breeze whooshing toward me didn't make it any better.

Also I am freaking out about my midterm since the quiz was so hard.

I now make my burgers like them. They are geniuses.

They also make everything else good too.
Grilled Corn Salad

Ingredients

  • 6 ears fresh corn, husked with silks removed
  • 2 tablespoons canola oil
  • Salt and pepper
  • 2 cups halved cherry tomatoes
  • 1 small red bell pepper, finely chopped
  • 4 scallions, finely chopped
  • 2 cups packed arugula

Lemon Dressing:

  • 1 lemon, juiced
  • 4 tablespoons olive oil
  • Salt and freshly ground black pepper
  • Neelys Barbeque Seasoning, recipe follows

Directions

Preheat grill or broiler to medium heat.

Rub corn with 2 tablespoons of canola oil and season with salt and pepper. Grill or broil corn for 7 minutes or until ears are lightly browned. Remove from grill and allow to cool. Remove the kernels form the cob and place in a large mixing bowl along with the cherry tomatoes, red pepper, scallions, and arugula.

In a small bowl, prepare dressing by whisking together lemon juice, olive oil, salt, pepper and Neelys Barbeque Seasoning, to taste.

Toss the salad with the dressing and serve at room temperature.

Neelys BBQ Seasoning:

  • 1 1/2 cups paprika
  • 3/4 cup sugar
  • 3 3/4 tablespoons onion powder

Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.


Memphis mini burgers

  • 1 medium red onion, sliced
  • 1 pound lean ground beef
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 12 to 15 small potato rolls, split in 1/2
  • Mustard sauce, recipe follows

Directions

Preheat a flat top grill pan to high heat.

Add sliced onion to grill pan and cook until tender, about 10 minutes.

In a medium bowl, mix ground beef, onion powder, salt and freshly ground pepper. Make burgers equal in size, about 2-inches across.

Cook burgers on the flat top for 3 to 4 minutes on each side. Serve on split rolls with grilled onions

My favorite, Spensers sloppy joes.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, chopped
  • Salt and freshly ground black pepper
  • 2 pounds lean ground beef
  • 1 (8-ounce) can tomato sauce
  • 3 tablespoons tomato paste
  • 1 cup barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce (recommended: Tabasco)
  • 4 hamburger buns, split
  • Barbecue sauce, for topping

Directions

Heat oil in a large skillet with straight sides. Add the bell peppers and garlic. Saute until tender, about 3 minutes. Season with salt and pepper.

Add the ground beef to the vegetables. Stir and cook about 8 minutes, until the meat is no longer pink and fully cooked.

Add tomato sauce, tomato paste, barbecue sauce, Worcestershire, and hot sauce into the skillet. Stir. Simmer until thickened, about 10 minutes. Serve on hamburger bun with extra sauce.

Black Bean Salad

Ingredients

  • 2 cans black beans, drained, about 30 ounces
  • 1 (15-ounce) can corn, drained
  • 2 Roma tomatoes, diced
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced green onions
  • 1/4 cup diced pineapple
  • 1 tablespoon chopped cilantro leaves
  • 1 jalapeno, seeded and minced
  • 4 tablespoons sherry vinegar
  • Juice of 1/2 lime
  • 3 tablespoons honey
  • 1 tablespoons salt
  • 1 teaspoon black pepper
  • Pinch ground cumin

Directions

Mix all ingredients in a bowl and refrigerate for 1 hour.

Salmon with Puff Pastry

Ingredients

  • 4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
  • 4 (4 to 6-ounce) pieces salmon
  • 1/4 cup sliced almonds
  • 1/4 cup purchased pesto
  • 2 tomatoes, sliced

Directions

Preheat the oven to 400 degrees F.

On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.

To serve, place each piece of puff pastry on a plate. Top each puff pastry with 1 tablespoon of pesto. Top the pesto with 2 slices of tomatoes each. Top the tomatoes with the salmon and serve.

Things I hate .....

Right now I am pissed at NDNU!!!!
I got a letter in the mail notifying me that NDNU has decided to raise their already insanely high tuition a full 9 percent more per unit. I hate them! It is already bad enough paying the tuition I pay now, and they want o raise it. Do they really think they are worth it? Not only do they have a stupid rule that the last 12 units need to be taken at ndnu but I can't be taking any other classes during those 12 units. I am so mad. So this summer I am going to take all the csm classes I have left and then taking my last ndnu classes come fall since i only have 12 more units to take at ndnu.

I think I still need three classes

English lit
US History or some history course
and Macro econ

If I can get all online classes that would be ideal.
school still sucks!

I know I have mentioned her art before. But I really adore her artwork. I am totally going to put one of her drawings in each room. I also plan on having artists like gownsketch,
and gorgeous pinup art like this one by bellastichery
Now I am exhausted. Reading reading and more reading. My brain is fried. Tomorrow is going to be another long day. I go to work, then I have to do some last minute studying before class tomorrow. Then after well its the day I have to go to SF> I am really hoping its an easy short day so that I can do stat and bus policy hmk.

wedding dress drawing

I absolutely love Heather's work. I had her draw my wedding gown above. I plan on framing it and then hanging it next to my wedding picture. I think it would also be nice to have a picture drawn with me and George and another one with me and my sisters.

Brooklit is another artist I am now in love with.
I am considering some of her artwork too. Maybe when I have a home of my own, I can hang some of them alongside my real photographs.

New Hobby I want to do

Weekend and Shutter Island

So I am a bit tired so this post wont be as exciting as my sisters. But Saturday went really well. My sister got a fantastic deal on a pair of jeans, under 10 bucks. Plus they looked great. We also saw shutter island and that movie was great too. Kinda confusing, infact there were parts of it I didn't get until I woke up this morning. Yeah, im still thinking about it now. I still feel like i need to watch the movie again. Funny thing is right after the movie my dad mentioned that he hadnt seen "Gangs in New York" which is also with Leo. When I finally got home after 11pm, I turned on the TV and saw that that movie was playing. I recorded it and plan on watching it later. Tonight I am too exhausted. I forgot that it was daylights savings time again and got all bummed when I found out it was an hour later than I thought.

Anyways I love hanging out with my fam and especially my sister. I am looking forward to the weekend after next we all get to go watch Alice in Wonderland together.
Unfortunately next weekend I have a stat test to take at 3:30 to after 5pm. I am also beginning my bus policy class.

Oh and my hair is great, and my husband George noticed it was cut right away. ugh!!! I forgot to not put my back towards him. bleh! I lied and told him that he is imagining things and that I didn't cut it. He does not believe me.

Next week is going to be really hard. I have to do hmk and begin studying for stats tomorrow night. Then Tuesday night I have class. Wed I have to see the client and afterwards I need to study some more stat. I figure monday I'll do half of chapter 6. then on Wed I'll do all of chapter 5, then Thursday I'll do more of chapter 6 and begin creating my card. Then Friday I'll finish my card and do some practice problems. Then saturday I'll do last minute reviews before the test. ick to tests!

Then of course sometime in between I have to do bus policy hmk too.

So beautiful

I love her artwork. Unfortunately she is a tad pricey when it comes to her custom drawings. but I do love this particular piece of work. If his parents can get the house im thinking of getting this and hanging it up. Its 20 bucks.

I did find another artist that can draw my dress for much cheaper. I could always do it myself but that would take a lot of my time, especially with all the detail lace in my dress.

She also does fantabulous designs at a more affordable price. So I may choose her to draw my dress.
I plan on having it framed and put next to one of my wedding photos that I will hang on our wall.

So I was at George's parents last Sunday for a mini celebration.barbeque.
It was great.

Although very interesting. So Karine and Joseph might be engaged. I was tempted to say congrats etc,. but apparently he hasn't asked her yet and it seemed like he didn't want to tell anyone. Since the entire night she was trying to get him to announce to us their consideration of getting married in Vegas. I realized that it would be kinda awesome if they got married in vegas on George's anniversary. If they did we would have the same anniversary. But on the other hand it seems like Joe may not be ready to get married yet. In which case they should really wait. But I am totally up for another party:) Specially since our party won't be for a while. I definitely want to graduate first and well not be too poor.

also going to the client's wasn't too bad today. And george is doing great with his blp course. :) He is coming home tonight though because he has school work to do. But for the rest of the week he has free dinners.

also dinner with my parents was phenominal. It was the best meal I had in a long time. It was not just dinner it was an experience. We went to
Valerianos in Los Gatos. We had like three appetizers. This sea food platter, calamari, and crab cakes. Then we had our meal. I had filet mignon, but george's prime rib was the best. It was soo buttery fall of the rib delice! My mom had this fish meal which was also great and Kathryn got this salad. My dad ordered the same as me. Then we followed with two chocolate deserts. This brownie icecream one and triple chocolate mouse. drooolll!!! My dad also had many kinds of alcohol in between and they also had beer. Plus we had the wonderful bread and olive oil thing. Sigh, truly it was an experience I will remember forever.
Too bad Roberta wasn't there. but it was still great. whohoo to being 27!

Seamstress



So I hung out with Zeba today. She told me that she actually knows a seamstress that can make any design dress I want and she charges very little. I can actually get any style I want for less than 100 bucks.
In which case I would go all out and get a dress much like this. Either in the same color, or in a cream color, or in a peachy blush color. Or I could get it in white with gold along the edges. But I actually really love the powdery blue of this dress.

A pretty good day

Today has been not bad. For one thing the horrid client wasn't there so I was able to work in peace. Plus I was able to go home early.

This dress is what I used to envision myself wearing as a little girl. I was obsessed with pretty dresses and princesses and the whole fairytale.

Yes I realize this would be ridiculous. But there was a time when I was obsessed with these. Particularly after watching robin hood.
